I think Steven Spielberg goes a bit under-appreciated in film schools. Obviously he has made a huge cultural impact, but people seem to forget why; he's really, really good.
One aspect of Spielberg's style I have always enjoyed is how he manages to use blocking to stitch multiple shots into one. I think it's really creative and it is very effective in giving his scenes a real energy.
He isn't flashy or anything though. Obviously long shots like Children of Men are impressive, but they draw your attention to their artificiality. When Spielberg does it he keeps it subtle.
